In the constant struggle to find something new but quick to make for dinner (god that makes me sound old) I am always on the lookout for simple, one-bowl dishes that are quick to make and even quicker to wash up. This one ticks most of those criteria. Although it looks like a faff when you read the recipe, it’s really not, and scooping out the insides of a courgette takes mere seconds (they’re very soft). Frying up the stuffing takes a similarly short time and they then go in the oven for 15 minutes tops. Quick and very filling. And also surprisingly healthy, always a bonus.
3 large courgettes, halved lengthways
1 shallot, diced
2 cloves of garlic, minced
Half a red pepper
250g turkey mince
1/4 teaspoon cinnamon
2 tablespoons raisins
1 tablespoon pine nuts
2 tablespoons grated cheddar cheese
1. Preheat the oven to 180 C.
2. Scoop out the seeds from the courgettes and place them face down in a microwave-proof dish with a tablespoon of water. Microwave on high for 4 minutes, until just slightly soft on the outside.
3. In a frying pan heat a drizzle of oil. Fry the shallot and garlic for 4 minutes until lightly browned. Add the turkey mince and the red pepper, and cook until the mince is browned all over. Add a good sprinkle of salt and pepper, plus the cinnamon, and stir in the raisins and pine nuts. Cook for another minute, then stir in the grated cheese.
4. Stuff the scooped-out courgettes with the mixture and bake in the oven for 15 minutes, until the courgettes are cooked all the way through and the stuffing is going slightly crispy on top.
Serves 2 large appetites (or 3 if you’re not feeling especially hungry).
